I went Vegan January 2016 after trying VeganJanuary https://veganuary.com/ before this i'd been vegetarian for some time.
I thought it would be much harder than it was, but with a bit of planning and knowing good and tasty substitutes it was fairly easy and I haven't looked back...I feel fitter, stronger and have more energy. Even if we just replace one meal a week with a plant based alternative, this really helps your health, the environment and of course animals - or challenge yourself to go vegan for January next year!
I thought i'd share a few of my favourite recipes with you which committed carnivores will also enjoy! Tried and tested on my omnivore family who will happily tuck into my food without any moans!
This is a real crowd pleaser - i've re-typed the recipe I loosly use as i've tweaked it to my tastes and added some tips - but feel free to tweak it yourself! the Cauliflower Cous Cous is so easy to make - especially if you have a processor - just use the normal blade and blitz - healthy, low cal and low carb too.
